Product Description

Properties: Gelling agent.

Carbohydrate, type of an algae.

Use for: hard caviar, hot gelatines (90ºC), gelatines, purees, veils, foams.

How to use: Mix in a liquid, bring to a boil and let cool.

Application: Any liquid preparation.

Observations: Heat resistant (90ºC), not frozen. Thermo reversible. In acidic media, gels less. Gelatin not very elastic.
